SILKEN TOFU NICECREAM





I already know what you're thinking. But trust me. Just trust me.

After finding Vegan Family TV on YouTube, I became hooked on their videos - particularly their day in the life ones, where they go through the meals they have as a family, their workouts in the morning, etc etc etc. Because of how easy it looks, it really encouraged me to try and change my lifestyle to a ethical one, with much less animal products involved, so I have a reduced impact on the planet.

One of the recipes that cropped up in most of their vlogs, was starting the day off with tofu nice-cream for breakfast. Wasn't as convinced in the beginning, but I have to be real - it looks like ice cream! And who wouldn't want the opportunity to have ice cream for breakfast, that was protein packed, low fat and rich in fibre. That sounded sick to me, so I thought I'd have a go.



Makes One Large Portion or Two Small Portions

INGREDIENTS

1 Block of Silken Tofu (349g)
500g Bag of Frozen Mixed Berries
1 Tablespoon of Maple Syrup
Half a Banana

METHOD

Open and drain the silken tofu and pop it into a food processor or blender. Chopping it down into chunks could make the whole blending process easier. Add the frozen fruit, half a banana and the teaspoon of maple syrup. Blend it all until smooth and silky. Serve immediately.

I topped mine with dates, more frozen fruit, nutella and bananas. The mix of textures was incredible. (TRY GRANOLA ON TOP TOO OMG)

This portion is quite large so I'd split this in two and share it with a friend. Also allows room for toppings. The vegan family I mentioned above would serve this for just one person because they practice intermittent fasting, so this would be one of their two meals in one day.
