INGREDIENTS
3 Medium Sized Eggs
A Tablespoon of Butter
EQUIPMENT
A Small Non-Stick Saucepan
Sieve
A Fork
Plastic Spatula
Small Jug
METHOD
In a small jug, whisk the eggs until well combined and frothy. Heat your saucepan over a low heat and add your butter, stirring it until it's fully melted. Sieve your whisked eggs into another container, then pour the contents into your pan and begin to stir very slowly with your plastic spatula. Make every effort to continue 'cleaning' up the sides of the pan with your spatula to ensure your eggs stay evenly cooked and glossy. This process should only take a few minutes as you just want the curds to set, not over cook. Once your eggs are almost set, and still glossy in appearance, turn off the heat and turn out the eggs onto a warm plate. I think they're best served with warm sourdough toast, or a soft warm croissant.
