HAM AND CHEESE CREPES.

Boys and Girls,

Recently I've been really into crepes. I served some sweet crepes to my Mum for dessert the other day  and she loved them! (sorry Dad, you were at work).. and it got me thinking.. Maybe I could try making them for a savoury meal? Maybe a breakfast crepe?.. So after going to bed and pondering the idea, (I spend a lot of time thinking about food) I woke up the next morning eager to try my hand at making something delicious...



INGREDIENTS

For the Crepes:

Four Heaped Tablespoons of Plain Flour
100 - 125ml of Milk (Any)
1 Medium Egg
A Pinch of Salt

For the Filling:

5 Slices of Honey Roasted Ham
25g of Cheese (I reccomend a Cheddar, Double Gloucester or a Gruyere)
1 Spring/Green Onion
Pepper
Salt

METHOD

Start by making your crepes. Combine all the ingredients for the crepes listed above in a large bowl and whisk very well making sure there are no lumps, and everything has been incorporated well. In batches, pour small amounts of the batter into a medium non stick frying pan over a medium heat. When pouring the batter, use a ladle to ensure you're pouring even, consistent amounts each time. Also - when pouring the mix into the pan, pour into the middle, and tilt the frying pan so the mixture spreads evenly across the surface of the pan, making sure your crepes are thin and crispy. After 1 - 2 minutes on one side, flip your crepe and cook for a further minute before removing it from the pan and starting on the next one.

When you have finished your batter, take a crepe and fill it with the ham and cheese, (as much or as little or as you like) fold it closed and sprinkle with your sliced spring onion and any sauce you would like to accompany it (I used a sriracha). Serve.
