A Proper Breakfast.


Waking up at 5:45AM each day to get the 6:40AM train into London, for work, can really take it out of you.

And leaves little time for a proper breakfast. So on the weekends, I like to treat myself.



This Saturday it was a fluffy pancake topped with basil pesto, crispy smoked back bacon, buttery spinach and mushrooms, a runny poached egg and fresh cherry tomatoes. This was a dish I (sort of) invented, that was inspired by a particular dish served for breakfast at the restaurant. It was delicious, but really filling haha, I could hardly finish it and fell asleep soon after (half feeling really full, half recovering from work lol).

Experimenting with flavours and seeing what works together is an essential part of growing as a chef. You can easily 'create' amazing dishes by putting a bit of thought into it beforehand, or by reinventing a classic. I haven't had something like this for breakfast before, but isn't it somewhat similar to the english 'fry-up' or builder's breakfast?
